Ham and Cheese Sliders
What You Need
12 Dinner Rolls
12 Slices Honey Ham
12 Slices Swiss Cheese
1/3 Cup Light Mayo

Poppy Seed Sauce
5 Tablespoons Butter
1 Tablespoon Yellow Mustard
1/2 Tablespoon Poppy Seeds
1/2 Tablespoon Minced Onion
1/4 Teaspoon Worcestershire Sauce

Cut the rolls down the middle. Spread a teaspoon of light mayo on the bottom half of each roll. Place the bottom halves of rolls in a 9x13" baking dish. Top each bottom with one slice of ham and one slice of swiss cheese. Top each roll with the other half.

In a small microwavable bowl, melt the butter in the microwave. Whisk in the remaining poppy seed sauce ingredients. Carefully pour the poppy seed sauce evenly over all of the rolls. Let stand for about 10 minutes or until the butter has set slightly. Cover the baking dish with foil and bake at 350 degrees for 12-15 minutes. Remove the foil and place back into the oven for 2 more minutes, or until the cheese has completely melted. Serve warm.

Warning: Can be messy...but completely worth it!



Cowboy Caviar
What You Need
2 Cans Black Beans, rinsed and drained
1 Can Whole Kernel Corn, drained
2 Large Tomatoes, chopped
1 or 2 Large Avocadoes, peeled and diced
1/2 Red Onion, chopped
1/4 Cup chopped fresh Cilantro

Dressing
1 Tablespoon Red Wine Vinegar
3 to 4 Teaspoons Lime Juice
2 Tablespoons Olive Oil
1 Teaspoon Salt
1/2 Teaspoon Pepper


Combine all ingredients in a large bowl. Cover and chill. Garnish with additional avocado slices if desired. Serve with tortilla chips.

Delish!!!
